Ingredients:
Basmati rice - 1 cup
Red radishes (roughly chopped) - 1 cup
Red onions (finely chopped) - 1 medium
Corn kernels - 1/2 cup
Green peas - 1/4 cup
Ginger-green chilli-cilantro paste(GGC paste) - 1 tbsp
Clove-cinnamon-cumin-coriander powder(4C powder) - 1 tbsp
Salt - to taste
Lemon juice - 1 tsp
Coriander leaves(chopped) - 3 tbsp
Method:
Cook basmathi rice with 2 cups of water.
Heat 2 tsp of oil or ghee in a kadai on medium heat.
Add the GGC paste and 4C powder, sauté for few minutes, until they leave the raw smell.Continuously stir and take care not to burn the masala.
Add all the vegetables and salt and sauté until soft.
Add the cooked basmati rice to this sautéed vegetable mixture.
Add chopped coriander leaves and lemon juice.Mix well and serve with raita.
