BRINJAL KOOTU

Ingredients:

Brinjal(chopped) - 3-4 medium sized
Tamarind - small lemon size ball
Salt - to taste
Turmeric powder - 1/4 tsp
Red chili powder - 1/4 tsp
Jaggery - 1-2 tbsp
Coconut(grated) - 2-3 tbsp
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Curry leaf - a sprig
Oil - 1 tsp

Method:

Add hot water to the tamarind and extract the tamarind pulp from it. 

In pan, add brinjal,1/4 cup tamarind pulp, salt, turmeric powder, red chili powder and kootu powder

Add 1/2 cup water if needed and cook on med flame.  When the brinjal is almost cooked, add jaggery and cook fully.

Heat oil in small pan and temper urad dal, mustard seeds, curry leaves and coconut gratings till coconut is browned.

Add seasoning to curry and serve with rice or roti.

Note: The curry is a fine balance of sour, salt, spice and sweetness. So adjust the flavors according to your taste.
