CHEMBA PUTTU


Puttu is a common breakfast in Kerala. It is usually made out of raw rice flour and is cylindrical in shape.Puttu can also be made of wheat flour, corn flour, ragi flour or Chemba rice flour.Nowadays Instant puttu mix(i.e all the above mentioned flours) is available in grocery stores. Puttu is made with the help of a Puttu maker. Puttu maker is a steamer which is cylindrical in shape. The dish has to be made with lot of coconut. Puttu is served with black-chickpeas curry or green-gram curry. Even white-chickpeas curry or potato stew can also be served as accompaniment.The typical kerala way is puttu with sugar- pappadam- plaintain.

Ingredients :
2 cups of rose matta rice.
1 cup of coconut
Salt to taste

Method:
Soak the rice for two hours and strain it. Spread the rice in a cloth or a plate and allow them to dry.
Grind the dried rice to a fine powder in the mixer. Heat the powder for 5 minutes.While heating, keep stirring.
Keep the fried powder to cool.
Mix salt in water and add the water little by little to the rice flour and mix it.Using your fingers keep mixing till the flour starts looking like crumbs. If you take a little in your fist and scrunch it up, it should hold its shape when you open your palm. Let the moistened rice powder rest for about 10 minutes.
You should be careful while mixing the water to the rice flour.If you add too little water, the puttu will be dry and uncooked when steamed. If you add too much water, the puttu will be a lumpy mass after steam cooking.It should be in a powdered form wet enough for steaming.
Now add a fistful full of grated coconut in the puttu maker and then add the rice flour till half, then add another handful of coconut. This is done till you reach the top of the cylindrical shape.
Close the lid and steam for 8 - 10 minutes.

Note:
1.Do not press the flour down into either the puttu maker or the puttu will not cook properly since there is no place for the steam to get through the puttu.
2.If you are using instant puttu mix, you just need to add salt and water and mix well.
