VERMICELLI VEG UPMA

Ingredients:
Vermicilli (Anil or MTR brand) - 2 cup
Potato (cubed) -1/2 cup
Onions(finely chopped) - 1 small
Carrot (cubed) - 1/2 cup
Green peas - 1/2 cup
Tomato (chopped) - 1 small
Green chilli(slit) - 2-3
Ginger(grated) - 1 tsp
Coriander leaf - 3 tbsp
Mustard seeds - 1 tsp
Channa dal - 1 tsp
Oil - 1 tbsp
Salt - To taste

Method:
Heat oil in kadhai/pan. Add channa dal, once lightly browned add green chilli, ginger and mustard seeds and splutter.
Add onions and fry translucent. Add all chopped vegetables and fry for 1-2 min.
Add 2 cups of water and salt. Let it boil and half cook vegetables.
Add vermicelli/semiya and mix well. Sprinkle few drops of water and cover. Check for salt after adding vermicelli and add if required.
Cover and cook for 2-3 min on med heat.
Turn off heat and let it be covered for another 2 more mins.
Add coriander leaves and mix well.
Serve hot with pickle.

Note:
The vermicelli shouldnot be raw. It has to be fully cooked.
