MIXED VEGETABLE CURRY

Ingredients:
Green beans (chopped lengthwise) - 1/4 cup
Lima beans - 1/4 cup
Carrot(cubed) - 1/4 cup
Green peas - 1/4 cup
Corn kernels - 1/4 up
Salt - to taste
Red chilli powder - 1 tsp
Tumeric powder - 1/4 tsp
Asafoetida - A pinch
Mustard seeds - 1 tsp
Urad dal -1 tsp
Oil - 1 tbsp
Curry leaf - a sprig
Coriander leaf (chopped) - 3 tbsp

Method:
Cook all vegetables with salt,tumeric and red chilli powder.
Heat oil in pan , season mustard and urad dal. Once seeds splutter add asafoetida and fry for a sec.
Add seasoning,curry leaf & coriander leaf to vegetables.
Serve hot with rice or rotis.
