INGREDIENTS:
Whole wheat bread

8-10 slices

Potatoes

2 large

Coriander leaves

1 cup tightly packed + 1 tbsp

Onion

1 small sliced into circles

Tomato
|
1 small sliced into circles

Cucumber
|
1 small sliced into circles

Green chili
|
1-2 small

Salt

To taste

Red chili powder
|
¼ tsp

Garam masala powder
|
¼ tsp
|
Chaat masala powder
|
1 tsp
|
Tomato ketchup
|
4-5 tbsp
|
Butter
|
4-5 tbsp softened

METHOD:
Potato Filling:
- Pressure cook the potatoes and mash the potatoes while hot. Add salt to taste, red chili powder, garam masala powder and a tbsp of coriander leaves. Mix well.
Green chutney:
- Grind 1 cup of tightly packed coriander leaves, ¼ tsp salt and green chilies into a smooth chutney. Adjust the amount of green chili as per your spice level.
Assembling sandwiches:
- Take a slice of whole wheat bread and apply butter on one side. Add a tbsp of green chutney on the buttered side of the slice.
- Then spread 2 tbsp of potato filling evenly on top of the bread. Add few slices of onion, tomato and cucumber on top of the potato filling. Sprinkle few pinches of chaat masala on top of it. Keep aside.
- Take another slice of bread and apply little butter on one side. Thenon top of that, add a tbsp of tomato ketchup and spread evenly. Place the ketchup side of the bread on top of the previously prepared green chutney-potato slice.
- Spread ½ tsp of butter on the outer sides of the sandwich. Heat a tawa and toast the sandwich on both sides till golden brown and crisp.
- Repeat the same process to prepare rest of the sandwiches.
- Cut in the sandwich diagonally.
- Serve hot with freshly squeezed orange juice.
