METHOD:
- Wash and soak the toor dal for 30 minutes. Meanwhile peel and chop the lauki into small cubes.
- Add the soaked dal, chopped lauki and koorka along with salt, turmeric powder, red chili powder and kootu powder into a pressure cooker and cook for 3-4 whistles.
- Grind grated coconut with cumin seeds into a smooth paste.
- When the pressure is released, open the cooker and add the ground coconut paste. Boil the kootu for 3-4 minutes.
- In a small tadka pan, add oil, mustard seeds,urad dal and curry leaves. Once the mustard seeds splutter, add the tadka to the kootu.
- Serve warm with hot rice and ghee.
