LAUKI AND KOORKA KOOTU


INGREDIENTS:

Lauki
1 small
Koorka(Chinese potato)
½ cup frozen
Toor dal
¼ cup
Salt
To taste
Turmeric powder
½ tsp
Kootu powder
1 tbsp
Red chili powder
¼ tsp
Coconut
3 tbsp grated
Cumin seeds
¼ tsp
Oil
1 tsp
Mustard seeds
½ tsp
Urad dal
½ tsp
Curry leaves
4-5 leaves

METHOD:
  • Wash and soak the toor dal for 30 minutes. Meanwhile peel and chop the lauki into small cubes.
  • Add the soaked dal, chopped lauki and koorka along with salt, turmeric powder, red chili powder and kootu powder into a pressure cooker and cook for 3-4 whistles.
  • Grind grated coconut with cumin seeds into a smooth paste.
  • When the pressure is released, open the cooker and add the ground coconut paste. Boil the kootu for 3-4 minutes.
  • In a small tadka pan, add oil, mustard seeds,urad dal and curry leaves. Once the mustard seeds splutter, add the tadka to the kootu.
  • Serve warm with hot rice and ghee.
