INGREDIENTS:
Chana dal

METHOD:
- Wash and soak the chana dal for 20-30 minutes. Peel and cube lauki into pieces.
- In a pressure cooker, add a tbsp of oil. As oil heats, add mustard seeds, cumin seeds, dry red chili, curry leaves and asafetida.
- As seeds splutter, add ginger paste, chopped green chili and chopped onions. Sauté until translucent, add chopped tomatoes.
- Sauté until tomatoes turn mushy. Add salt, turmeric powder, red chili powder and coriander powder. Mix well and cook for another 2-3 mins.
- Add chopped lauki and soaked chana dal. Mix well and add 1.5 cups of water. Cover and cook for 4-5 whistles.
- As pressure settles, give a good mix and add chopped coriander leaves.
- Serve hot with roti and rice.
