LAUKI CHANA DAL



INGREDIENTS:

Chana dal
3/4 cup
Lauki
1 small
Onion
1 small chopped
Tomato
1 medium chopped
Salt
To taste
Turmeric powder
½ tsp
Red chili powder
½ tsp
Coriander powder
1 tbsp
Oil
1 tbsp
Mustard seeds
½ tsp
Cumin seeds
½ tsp
Dry red chili
1-2
Curry leaves
1 sprig
Ginger paste
1 tsp
Green chili
1 – finely chopped
Asafetida
A pinch


METHOD:
  • Wash and soak the chana dal for 20-30 minutes. Peel and cube lauki into pieces.
  • In a pressure cooker, add a tbsp of oil. As oil heats, add mustard seeds, cumin seeds, dry red chili, curry leaves and asafetida.
  • As seeds splutter, add ginger paste, chopped green chili and chopped onions.  Sauté until translucent, add chopped tomatoes.
  • Sauté until tomatoes turn mushy. Add salt, turmeric powder, red chili powder and coriander powder. Mix well and cook for another 2-3 mins.
  • Add chopped lauki and soaked chana dal. Mix well and add 1.5 cups of water. Cover and cook for 4-5 whistles.
  • As pressure settles, give a good mix and add chopped coriander leaves.
  • Serve hot with roti and rice.
