INGREDIENTS:

METHOD:
- Wash the amla under running water thoroughly. Pressure cook the amla with 1 tsp salt, ¼ tsp turmeric powder and ½ cup of water for 1 whistle.
- Drain the water from the cooked amla and keep aside. Let the amlas cool for 5 mins. Then slice the amlas using a knife and discard the seeds.
- In a mixing bowl, add sliced amlas, 2-3 tbsp of pickle masala mix and the strained water. Mix well and keep aside. Check for salt and spice and add if required.
- In a small tadka pan, heat 2 tbsp of sesame oil and add 1 sprig of curry leaves and mustard seeds. Once seeds splutter, add the tadka to the amla-spice mixture.
- Add 1 tsp of vinegar also and mix everything well. Cover and keep the pickle aside in room temperature for few hours so that all the flavors are absorbed in amla.
- Mix once again and transfer to a clean glass jar with lid. Cover and store in referigator.
- Enjoy the pickle with curd rice!!!
