INGREDIENTS:
Pumpkin

1 cup -chopped into big cubes

Salt
|
As needed

Turmeric powder
|
¼ tsp
|
Jaggery powder
|
½ tsp
|
Oil
|
1 tsp
|
Mustard seeds
|
½ tsp
|
Orid dal
|
½ tsp
|
Coconut
|
2-3 tbsp grated
|
METHOD:
- Wash and peel the skin from the pumpkin. Chop them into big cubes.
- Cook the pumpkin cubes with salt and turmeric powder in ¼ cup water. 1-2 green chilies can also be added while cooking the pumpkin.
- Once the pumpkin is cooked, add the jaggery powder and mix well so that it melts.
- Heat a tsp of oil in a tadka pan, add mustard seeds and orid dal. As seeds splutter and dal are golden brown, add the tadka to the pumpkin.
- Add the grated coconut and mix everything well.
- Serve the pumpkin thoran with rice and any gravy of your choice.
